- 1 Medium Sugar Pumpkin or 1 Can Of Pumpkin Puree (15 oz)
- 1 Medium Onion Diced
- 2-3 Cloves Of Garlic Minced
- 2 Cups Vegetable Or Chicken Broth
- 1 Cup Coconut Milk ( Or Heavy Cream )
- 1 Tsp Ground Cumin
- 1/2 Tsp Ground Nutmeg
- 1/4 Tsp Ground Cinnamon
- 1/2 Tsp Salt And Pepper
- 1 Tbsp Olive Oil
Wash your pumpkins and cut into half. Make sure to evenly cut. Roast them in an oven for at least 30 minutes. So, they become soft. Let them cool for a few minutes, and scoop the flesh.
In a large pan, add the olive oil over medium heat and sauté the onions and garlic until they become fragrant and soft.
Pour the pumpkin flesh and stir it well. Then add the chicken broth or vegetable stock. Let them simmer for 10 minutes. Blend your puree with an immersion blender.
Add the coconut milk and spices to the pumpkin mixture. Cook the pumpkin mixture until the spices blend well. Garnish your soup with a splash of coconut milk and fresh cilantro.
