Pumpkin Cupcakes For Halloween Treats

Ingredients
  

For The Cupcakes

  • 1 And 1/2 Cups All-Purpose flour
  • 1/2 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Tsp Ground Cinnamon
  • 1/2 Tsp Ground Nutmeg
  • 1/4 Tsp Ground Cloves
  • 1/4 Tsp Ground Ginger
  • 3/4 Cup Pumpkin Puree ( Canned Or Homemade )
  • 1/2 Cup Vegetable Oil
  • 2 Large Eggs
  • 1 Cup Granulated Sugar
  • 1 Tsp Vanilla Extract

For The Cream Cheese Frosting :

  • 8 oz Cream Cheese Softened
  • 1/4 Cup Unsalted Butter Softened
  • 2 Cups Powdered Sugar
  • 1 Tsp Vanilla Extract
  • 1 Tsp Orange Food Colour ( for a Festive Halloween Look )

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • Take a medium bowl ,whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger combined the ingredients well.
  • In an another mixing bowl, mix the pumpkin puree, oil, eggs, sugar, and vanilla extract until it becomes smooth and well combined. Gradually incorporated the dry ingredients into wet ingredients. Don't overmix the batter.
  • Divide the batter evenly in cupcake liners. filling each about 2/3 full and Bake it for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Take a bowl, beat the cream cheese and butter together until it becomes smooth and creamy. Gradually add the powdered sugar, one cup at a time, and beat until fully combined and fluffy.
  • Then add the vanilla extract and, few drops of orange food coloring mix it well.
  • once the cupcakes are completely cool, then pipe or spread the cream cheese frosting on top of each one. You can use black frosting to draw spiderwebs or jack-o’-lantern faces, sprinkle some edible glitter, or top with Halloween-themed candies. Your pumpkin cupcakes are ready to serve!

Notes

1) If you’re looking for a shortcut to the perfect balance of spices, use pumpkin pie spice instead of individual spices like cinnamon, nutmeg, and cloves. 
2) To make the cupcakes extra moist, add a tablespoon of sour cream or Greek yogurt to the batter. It enhances the softness and keeps them from drying out, especially if you bake them ahead of time.
3) Once your cupcakes are frosted with orange frosting, shape them like little pumpkins by drawing ridges with the back of a spoon or spatula.
4) For a spooky surprise, hollow out the center of the cupcakes slightly after baking and add a surprise filling like candy corn, mini M&Ms, or Halloween-themed sprinkles. 
5) After frosting the cupcakes, decorate them with Halloween sprinkles (bats, pumpkins, ghosts) or small candies shaped like eyeballs, spiders, or mini pumpkins.
