Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 Pound Ground Beef (450 Grams)
  • 1 Medium Onion Diced
  • 3 Garlic Cloves Minced
  • 2 Tbsp Tomato Paste
  • 28 oz Crushed Tomatoes 1 Can
  • 4 Cups Beef Broth Used Almost 1 Lit.
  • 2 Cups Water Almost 480 Ml.
  • 1 Tbsp Italian Seasoning
  • 1 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • 8 oz Lasagna Noodles Broken Into Pieces
  • 1/2 Cup Ricotta Cheese
  • 1 Cup Mozzarella Cheese
  • 1/4 Cup Shredded Parmesan Cheese Grated
  • 1 Tsp Salt
  • 1 Tsp Black Peppar
  • Basil To Garnish

Instructions
 

  • Heat olive oil in a large pot or dutch oven over medium heat. And add the ground beef or Italian sausage, break them with the help of spoon and cook until browned and fully cooked through. Drain excess fat.
  • Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an 1-2 minutes until fragrant.
  • Pour in the chicken or beef broth, marinara sauce (or crushed tomatoes), water, and tomato paste. Stir well to combine. Add dried basil, oregano, crushed red pepper flakes, salt, and pepper. Bring the mixture to a boil.
  • Once the soup is boiling, add the lasagna noodles and reduce the heat to a simmer and cook until the noodles are tender, it will take near about 10-12 minutes and make sure to stir occasionally to prevent them from sticking.
  • In a small bowl, mix the ricotta cheese, shredded mozzarella and grated Parmesan with a pinch of salt and fresh basil and set aside.
  • Ladle the soup into bowl and add a dollop of the ricotta mixture on top then sprinkle with shredded mozzarella and Parmesan. Garnish with fresh basil or parsley for a pop of color and freshness.

Notes

1)Freeze leftover tomato paste in an airtight or freezer-safe container.
2) If your soup is more acidic due to tomatoes then you'll need to add a pinch of sugar or a splash of cream to balance the flavours .
3) Don't over cook your noodles otherwise it leads to mushy texture which detracts from the dish's overall quality. So cook until they are just al dente. It maintains the texture of lasagna soup.
4) If you're using vegetables then make sure to saute before adding to the soup mixture because it deepens the flavour of soup and give richer taste .
