For Pesto Sauce
- 2 Cups Fresh Basil Leaves
- 1/2 Cup Parmesan Cheese
- 1/3 Cup Pine Nuts ( Or Walnuts )
- 2 Cloves Garlic
- 1/2 Cup Olive Oil
- 1/2 Tsp Salt
- 1/2 Tsp Black Pepper
- 1/2 Lemon ( Juiced )
For The Pasta
- 12 Oz Pasta
- 2 Large Chicken Thighs ( Boneless , Skinless )
- 1/2 Cup Basil Pesto Sauce
- 3 Cloves Garlic ( Minced )
- 2 Tbsp Olive Oil
- 1/2 Cup Parmesan Cheese ( Grated )
- 1/2 Cup Heavy Cream
- 1 Cup Cherry Tomatoes
- 1 Cup Spinach
- 1/2 Tsp Red Pepper Flakes
- Salt And Pepper ( To Taste )
Cook the pasta according to package instructions until it becomes al dente. Reserve some pasta water, drain it, and set it aside.
Heat the olive oil in a pan and cook your chicken. Season them with salt, pepper, and garlic powder. Make sure your chicken turns golden in color.
Lower the heat and stir your pesto sauce and pasta water. Toss the pasta in sauce and stir in parmesan cheese with heavy cream. Cook your chicken pesto pasta for at least 5-10 minutes.
Add the cherry tomatoes, spinach, pine nuts, and fresh basil. Garnish your pasta with grated parmesan cheese and basil.

2) Used small chunks of chicken instead of a large one. Small ones cook quickly, and instead of using raw garlic, roast it for a sweeter, milder taste in the pesto.
