Dry Ingredients
- 2 Cups All-Purpose Flour ( Used Correct Measurement )
- 1 Cup Granulated Sugar
- 2 Tsp Baking Soda
- 1 Tsp Baking Powder
- 1 And 1/2 Tsp Ground Cinnamon
- 1/2 Tsp Ground Nutmeg
- 1/2 Tsp Ground Allspice
- 1/4 Tsp Ground Cloves Optional
- 1/2 Tsp Fine Salt
Wet Ingredients
- 1 Cup Vegetable Oil
- 4 Large Eggs At Room Temperature
- 3/4 Cup Applesauce ( Or Drained Crushed Pineapple )
- 3 Cups Finely Grated Carrots ( 14 oz or 6 Medium Carrots )
- 3/4 Cup Regular Raisins
For Cream Cheese Frosting
- 1 And 1/2 Cups Unsalted Butter ( 3/4 Ib )
- 8 oz Cream Cheese
- 4 Cups Powdered Sugar ( 1 Ib )
- 1 Tbsp Real Vanilla Extract
- 1/8 Tsp Salt
Preheat the oven at 350°F.
Grease the 9×9 inch cake pan with butter. You can align the pan with parchment paper as well and brush the butter at the top .this helps to easily realise the cake.
Take a mixing bowl and add all the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, salt,salt and our spices: cinnamon, nutmeg, and allspice. whisk the ingredients together until it is well combined.
Take another mixing bowl. Here we combine all the wet ingredients, like vegetable oil or olive oil, applesauce, and eggs, and whisk all the ingredients until it becomes well combined. Fold the wet
ingredients into dry ingredients using a spatula.
Peel the carrots and grate them with the help of a box grater. Add those finely grate carrots into your batter.
Now it's time to add our delicious raisins and chopped nuts into the mixture. Fold all the ingredients well till they're incorporated.
Divide the batter between your cake pans and bake in the center of the oven for about 30-35 minutes. Remove the cake pans and let them cool for 10-15 minutes after baking.
