  • Melt the butter in a 12-inch of cast-iron skillet. Put them over medium heat, get the butter melted nicely and stir the flour . You want to use a whisk for this part so that you don’t have any flour clumps and you make kind of a nice smooth paste .

  • Use the preheated smoker of 225°F and pour the Mac and cheese mixture into large baking dish then carefully place the baking dish into smoker. Close the lid and let it smoke for 45 min to 1 hr. Check it on every 20-30 min. Make sure don’t overcook the Mac and cheese. Once it done then carefully remove the baking dish from smoker.
