What is a smash burger?

I still remember the first time I had a smash burger at a restaurant. It wasn’t like the usual thick, juicy burgers I had tried before. This one was different. The edges were crispy, the patty was thin, and the flavor was out of this world. The moment I took my first bite, I could hear the crunch, followed by the juiciest, most flavorful beef I had ever tasted. I had to stop and ask myself, what makes this burger so good? Then I learned about the secret that it’s all about the smash.

A smash burger isn’t just a regular burger. It’s a thin, crispy-edged patty that’s smashed onto a hot griddle, searing the beef instantly and creating a deep crust. After that first restaurant experience, I knew I had to try making a smash burger at home. I thought, “How hard can it be?” Well, I quickly learned a few things:

  • You don’t need fancy ingredients: just fresh ground beef, salt, pepper, and enough. No eggs, no breadcrumbs, just beef and seasonings.
  • A hot pan is everything: if you have an indoor griddle, then well and good. Or a cast iron skillet also works great. You need the hotter surface to smash the patty.
  • Smashing is the key: I pressed the burger down hard, let it sizzle, and let it cook undisturbed. This gave me that restaurant-style crispy crust. I don’t have to go to a restaurant; I can whip it up in my own kitchen. So, let’s get started to make perfect Smash burgers.

What you need (ingredients):

  • Ground beef: used high-fat content beef, which is 80/20. Leaner meat will dry out too quickly. And yeah! Don’t overwork on meat. Frozen can work, but always choose fresh meat for a burger. Keep the beef cold before smashing; it holds shape better.
  • Seasonings: Here I’m using pepper, onion, and garlic powder. Right seasonings make all the difference, and sprinkling them on top right after smashing the burger makes your patty flavorful. If you want an extra touch, use Worcestershire powder while making the beef balls. But it’s better to keep it simple.
  • Mayonnaise: Mayonnaise is more than just a spread; it enhances the taste and texture of your burgers and makes them extra creamy. You can use regular mayo, Japanese mayo, or flavored mayo. Always spread a thin layer of mayo on the bun before adding toppings.
  • Pickles: For a tangy, crunchy, and slightly sour taste, I’ve added pickles. Not all pickles taste the same. But dill, garlic, spicy, or homemade pickles work great. Can be served on the side if you want to eat separately. Or simply layer them in your smash burgers.
  • Burger buns: They hold the juicy patty and toppings without falling apart. Use potato or brioche for best flavor. Lightly toast the buns with butter before assembling and toast for about 30-40 seconds to prevent sogginess. If you have enough time, then go for homemade buns.
  • Cheese: Most burgers use cheddar, but here I’m using American cheese for the best flavor. It melts perfectly and gives a mild and slightly salty flavor to your burgers. Cheddar is good but not as smooth as American cheese. If you want a gooey twist, go with American; if you want sharpness, then go for cheddar; and if you love spice, then use pepper jack. Well, I made your job easy.
  • Lettuce, tomatoes, and onions: they add freshness and crunch to your smash burgers. I’ve used iceberg and red onions. Used chopped lettuce for restaurant-style perfection.

How to make smash burgers?

  • Take 2-3 oz of ground beef and loosely form it into a ball and refrigerate it for at least 10-15 minutes. In this time, prepare your burger sauce and let it aside.
  • Heat the cast-iron skillet or griddle over high heat (around 400-450°F). Place your beef balls onto the griddle and immediately press down with a burger press or flat metal spatula. Smash as thin as possible and hold the press down for 10 sec. While the patty is still raw on one side, sprinkle the salt and pepper.

  • Allow the patty to cook for 1 minute. Until the edges become crispy and brown. Add a slice of American cheese. While the burger finishes cooking, melt some butter in a skillet and toast the burger buns until they become golden brown.
  • Spread your prepared burger sauce on the bottom of the bun and place the cheesy patty, then add pickles, diced onions, and lettuce. Gently press it and serve your smash burgers with crispy fries, onion rings, or coleslaw.

Can you freeze smash burger patties?

Yes, you can freeze smash burgers patty, and actually it’s a great idea. Just shape the patties, place them between parchment paper to prevent sticking, and store them in an airtight container or freezer bag. They stay fresh for about 3 months. When you’re ready to cook, there’s no need to thaw. Just smash them onto the hot griddle. This keeps the edges crispy and the inside juicy, just like fresh smash burgers. You can’t freeze the cooked patty.

Freezing the raw patties saves time and makes your burger night super easy. If you’re really short on time, prep the meatballs, toppings, and sauce in advance, and cook the burgers fresh when you’re ready to eat. That way, you still get the crispy, juicy experience without last-minute stress!

Pro tips for the perfect smash burgers:

1) Always use parchment between the burger press and beef balls while smashing; it prevents sticking.

2) Smash burgers cook in just 3-4 minutes, so have everything ready before you start to keep it hot and fast.

3) Once you smash the patty, don’t press it again after flipping. Smash only once and let it cook.

4) Too many toppings can make the burger fall apart and overpower the crispy beef, so keep it simple with lettuce, onions, pickles, and tomatoes.

5) Loosely form a meatball; don’t overwork on it. Otherwise it will turn tough.

What to serve with smash burgers and topping ideas—

Can you even imagine a burger without fries? A smash burger and crispy fries go together like peanut butter and jelly. You can upgrade your fries by sprinkling them with garlic parmesan, truffle salt, and a touch of Cajun seasoning. If you love a good crunch, swap out fries for some crispy onion rings. Dip them in spicy mayo or smoky chipotle aioli for an extra kick. Who says you can’t have mac and cheese with a burger? The creamy, cheesy goodness of a homemade mac and cheese side dish makes your meal extra special. If you’re grilling smash burgers outdoors, throw some corn on the cob on the grill as well.

  • For a sweet and savory topping, nothing beats slow-cooked caramelized onions on a burger. Sauté onions in butter and a splash of balsamic vinegar until golden brown.
  • Bacon with smoked gouda cheese and BBQ sauce = burger heaven. Lay your bacon slices on a baking sheet and bake for 15-20 minutes. Top your crispy bacon with smoked gouda cheese or your favourite one.

  • For a creamy, fresh contrast, you can add some slices of avocado or a spoonful of guacamole. I know it’s quite unique but worth it. You will get to read such unique things on my blogs, right?

Can I make it ahead?

Yes, you can make it ahead of time. I also make them ahead of time sometimes, but there are a few key things to keep in mind to ensure they stay juicy, crispy, and just as delicious as when they’re freshly smashed.

  • Smash burgers are all about that crispy crust, and for that, you need loosely packed meat. Form the beef into loose meatballs instead of pressing them into patties. Place them on a parchment-lined tray, cover with plastic wrap, and refrigerate it.
  • If you really want to cook them ahead of time, you can. Cook your smash burgers as usual, but remove them from the heat just before they’re fully done and let them cool slightly. Store them in an airtight container with parchment paper between layers, and you can refrigerate them for up to 2 days. It will stay fresh, and you can reheat it when you’re ready to eat.

What makes smash burgers better than regular burgers?

A lot of people ask this, and once you take a bite of a crispy, juicy smash burger, you’ll understand why. Unlike regular burgers, which are thick and sometimes dry in the middle, smash burgers are thin, crispy, and loaded with flavor. The real magic happens when you press the beef onto a hot griddle; it creates an ultra-thin patty with a golden-brown crust.
