Lasagna soup is single-pot, or we can say instant pot recipe soup. It combines all the traditional lasagna ingredients, like ground meat, tomatoes, pasta, onion, garlic, cheese, etc., then simmers in a rich chicken broth with Italian herbs and broken lasagna noodles. Then serve with the topping of a different cheese mixture. This is the traditional classic Italian dish served as a flavorful soup.

Traditional lasagna involves layering pasta, meat, sauce, and cheese but now with easy lasagna soup, you skip all that! Simply cook the ground meat, onions, and garlic in a pot, then add the broth, tomatoes, and seasonings. Once it simmers, you can toss in broken lasagna noodles and let them cook until tender. It’s all done in one pot, with no need to worry about assembling layers.

And it cozying up on a chilly evening with a bowl of something nourishing and warm.

Lasagna noodles give the soup a hearty and satisfying texture. Here I’m using about 8-10 lasagna noodles and break the noodles into bite-sized pieces before adding to the soup so, they are easier to eat.
Beef:
Ground beef is a common ingredient in classic lasagna recipes. It adds a meaty texture that complements the other ingredients like pasta and cheese. Meat maintains the traditional profile of lasagna soup. Ideally, you should use 1 pound (450 g) of ground beef.
Onion:
It provides a strong base flavor that enhances the overall taste of the soup. They add a savory depth and a slightly sweet undertone that complements the rich tomato base and other ingredients like garlic, herbs, and meat. You should use 1 medium diced onion.
Garlic:
2-3 cloves of minced garlic are used in a standard lasagna soup recipe, but you can use them according to your preference. Garlic is crucial for that authentic Italian-inspired taste in lasagna soup, balancing out the acidity of tomatoes.
Marinara sauce:
The amount of marinara sauce can vary depending on the recipe; you would use about 1 to 2 cups of marinara sauce and adjust according to your taste preference, whether you like a more tomato-forward soup or something more subtle. Marinara sauce adds a thicker consistency to the soup.
Crushed tomatoes:
You can use 1 to 2 cans (14.5 ounces each) of crushed tomatoes. They provide the base of the soup, it gives slightly rich and chunky consistency. The tomatoes add acidity, sweetness, and depth of flavor, which balance the richness of the meat, pasta, and cheese.
Tomato paste:
The paste helps to thicken the soup, giving it a rich, velvety texture. and tomato paste adds a vibrant red color to the soup. You should use 2 to 4 tablespoons of tomato paste. You can freeze the leftover tomato paste.
Chicken broth:
Make your own broth from scratch using chicken bones and scraps. This homemade broth will have a deeper, more complex flavor compared to store-bought versions. you might use about 4 to 6 cups of chicken broth, but it can vary upon the quantity of soup.
Herbs and spices:
The lasagna soup is seasoned with dried basil, thyme, oregano, and parsley, salt, and a bay leaf.
Red pepper flakes:
If you want to add spicy kick, to your soup, then add ¼ to ½ teaspoon of red pepper flakes. This is a mild range of adding spice.
Heavy cream:
It provides richness, creaminess, and a velvety texture to the broth. You can adjust the amount based on your preference for creaminess.
How to make Delicious Easy Lasagna Soup:-
• In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. And add the ground beef or sausage, break them into small pieces as it cooks. Cook until browned and fully cooked. Toss in the chopped onion and cook until soft and translucent, about 5 minutes. Then add the minced garlic and sauté for another 1–2 minutes until fragrant.
• Stir in the tomato paste, make sure it coats the meat evenly. This step deepens the tomato flavor and add the crushed tomatoes, diced tomatoes (with their juice), and broth then stir to combine. And Season with Italian seasoning, red pepper flakes, salt, and pepper then bring the mixture to a boil.
• Reduce the heat to a simmer and add your uncooked past. Cook for about 8–10 minutes or until the pasta is tender, stir occasionally to prevent them from sticking. While the soup is simmering, prepare the cheesy topping. In a small bowl, mix ricotta cheese with a pinch of salt and fresh basil or parsley .Grate your mozzarella and Parmesan cheese and let aside.
• Once the pasta is cooked, ladle the soup into bowl and add a dollop of the ricotta mixture on top. Sprinkle with shredded mozzarella and Parmesan. Then Garnish with fresh basil or parsley for a pop of color and freshness.

Instead of using ground beef or meat and chicken broth, you can use plant-based ground meat, vegan cheese, vegetable broth, lasagna noodles, tomatoes, onions, garlic, and I highly recommend to used zucchini, mushrooms, and spinach; it makes your soup more rich.
Seafood Lasagna Soup :-
If you don’t like meat or beef, this is a good option. Instead of using ground beef you can use shrimp, scallops, crabs, and fish stock. It also gives the flavorful taste to lasagna soup.
Chicken easy lasagna soup:-
chicken is milder or lighter than beef, but still it gives satisfying texture or taste to your soup. You should use chicken broth, shredded chicken, garlic, and onions the same as ground beef lasagna soup.
The Best Way To Store And Reheat Lasagna Soup :
1) Let the soup cool at room temperature before storing it and pour it into an airtight container, then place in the fridge for up to 4-5 days. If possible, store the pasta separately to prevent it from absorbing too much soup and becoming mushy.Â
2) Wanted to store for longer periods of time? You’ve got to freeze them in a freezer-safe container, but without pasta. And store for up to 3 months. before reheating, you’ll need to thaw in the fridge overnight.Â
3) Reheat the soup on the stovetop over medium heat and add a splash of broth or water. If pasta stored separately, then add to the soup while reheating.

- 1 Tbsp Olive Oil
- 1 Pound Ground Beef (450 Grams)
- 1 Medium Onion Diced
- 3 Garlic Cloves Minced
- 2 Tbsp Tomato Paste
- 28 oz Crushed Tomatoes 1 Can
- 4 Cups Beef Broth Used Almost 1 Lit.
- 2 Cups Water Almost 480 Ml.
- 1 Tbsp Italian Seasoning
- 1 Tsp Dried Basil
- 1 Tsp Dried Oregano
- 8 oz Lasagna Noodles Broken Into Pieces
- 1/2 Cup Ricotta Cheese
- 1 Cup Mozzarella Cheese
- 1/4 Cup Shredded Parmesan Cheese Grated
- 1 Tsp Salt
- 1 Tsp Black Peppar
- Basil To Garnish
InstructionsÂ
- Heat olive oil in a large pot or dutch oven over medium heat. And add the ground beef or Italian sausage, break them with the help of spoon and cook until browned and fully cooked through. Drain excess fat.
- Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an 1-2 minutes until fragrant.
- Pour in the chicken or beef broth, marinara sauce (or crushed tomatoes), water, and tomato paste. Stir well to combine. Add dried basil, oregano, crushed red pepper flakes, salt, and pepper. Bring the mixture to a boil.
- Once the soup is boiling, add the lasagna noodles and reduce the heat to a simmer and cook until the noodles are tender, it will take near about 10-12 minutes and make sure to stir occasionally to prevent them from sticking.
- In a small bowl, mix the ricotta cheese, shredded mozzarella and grated Parmesan with a pinch of salt and fresh basil and set aside.
- Ladle the soup into bowl and add a dollop of the ricotta mixture on top then sprinkle with shredded mozzarella and Parmesan. Garnish with fresh basil or parsley for a pop of color and freshness.
Notes
1) how long is Lasagna Soup good for in fridge??
Ans: it is good to refrigerate about 3-4 days in air tight container. If you don’t plan to eat the soup within 3-4 days, you can freeze it. When reheating, thaw it in the fridge overnight, then warm it up on the stove or in the microwave. But after month If the soup smells off or has an unusual taste, it’s best to discard it. You can make it fresh when you have a cravings for soup.
2) Can I make Lasagna Soup in a slow cooker?
Ans : yes absolutely!! Why not, it can be made in a slow cooker. Brown the meat first, then add all ingredients (except the pasta and cheese) to the slow cooker and cook on low for 6 8 hours. You can add pasta and cheese in last 30 minutes. your soup is ready to serve.
3) What type of pasta should I use for Easy Lasagna Soup?
Ans: mostly, broken lasagna noodles are used, but you can substitute with other pasta like mafaldine, rotini, or even penne if you prefer you can used Campanelle pasta These bell- shaped pasta pieces have ruffled edges, which help capture the sauce Or Orecchiette pasta This is small, round pasta has a cup-like shape that scoops up the soup’s ingredients beautifully, offering a satisfying texture.
4) Is Lasagna Soup gluten-free?
Ans: yes!! But their are several conditions. It can be made gluten-free by using gluten-free pasta and ensuring that all other ingredients (like broth and sauces) are certified gluten free. if the cheese is pre-shredded or processed, as some anti-caking agents might contain gluten. So always need to double check the ingredients. Some seasoning mixes or pre made sauces may contain gluten. So if you want to make gluten-free versions make your own seasoning blends to avoid this issue.
