Apple pie cookies are one of my favourite dessert treats. I first made these when I was craving apple pie but didn’t want to go through the hassle of making a full one. So, I decided to try apple pie cookies, and it turned out to be a delightful experience!! I really love the smell of cinnamon, apples, and butter filling.You know what the best part of these cookies is—each cookie had a perfect balance of sweetness and soft crumble texture. I have recommended using a combination of apples that gives a sweet as well as tangy taste to the apple pie. Used Granny Smith and honeycrisp apples. Braeburn and Jonagold are also great choices. So, feel free to use the apples according to your preferences and choices. The tartness of apples gives a rich taste to your pie cookies.

What we need :

  • All purpose flour: You can use gluten-free flour like almond flour, oat flour, or gluten-free all purpose flour for gluten-free options, but make sure to check the proportions. It helps to create perfect cookie dough. Which is slightly crisp on the outside and tender inside. 
  •  Unsalted butter: Unsalted butter is fresher than salted one. Instead of unsalted butter, you can use margarine, coconut oil, or ghee, i.e., clarified butter, as well. 
  • Granulated sugar: Granulated sugar helps to create tender texture in the cookie dough. If you don’t have granulated, then feel free to use brown sugar , coconut sugar , maple syrup, or monk fruit sweetener.  
  • Apples: Make sure to use the right apples for Apple Pie cookies. Read point number 2 for how to choose the right apples. It’s best to avoid using apples that are too soft or have a high water content, as they can make the cookies soggy and lose their shape.  
  • Spices: I’ve used spices like cinnamon and nutmeg, which give classic flavor to the cookies. It gives a warm aroma and depth of flavor, which makes every bit more interesting.You can use ginger, allspice, and cloves as well.  
  • Lemon juice: Lemon juice helps to prevent apples from browning and keep them fresh. It gives a bright and tangy taste, which enhances the overall flavor. 
  • Egg: Egg helps to bind the cookie dough and helps to maintain their shape while baking. It also provides a softer and chewier texture to the cookies. If you want a vegan option, then use Applesauce, mashed bananas, or yogurt. 

How to make pie dough :

  • I’ve used a food processor; it helps in proper mixing of ingredients. In a food processor, you’ve got to add all-purpose flour, spices, and sugar and pulse until well combined. Then add cold, cubed unsalted butter, then slowly add the ice water, a tablespoon at a time. Until the dough starts to come together.  
  • Form a dough into balls and wrap it with plastic wrap, then refridgerate for about 30 minutes.  

How to make apple pie cookies :

  • It’s time to prepare the apple pie filling. While the dough is chilling, you’ve got to peel the apples and finely chop them into bite-sized pieces. Take a medium saucepan, then add chopped apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook it over medium heat until your apples soften and the mixture looks thickened. It’ll take up to 8-10 minutes. Slowly add the all-purpose flour to make your filling more thick.

  • Woohoo!! Everything is ready; just assemble it and bake your delicious cookies. Preheat your oven to 375°F (190°C) and line the baking sheet with parchment paper.  
  • Take out your dough from the refrigerator and roll it out on a lightly floured surface to about 1/4 inch thickness. You’ve got to use a cookie cutter to make perfect cookies. And spoon a small amount of apple filling into the center of the circle. Roll out the dough and make a stripe and place it over the apple filling. Check out the given picture.

  • Place the edges with the fork to seal. And brush the top with egg wash, then sprinkle the little sugar over the cookies. Now bake your cookies in a preheated oven for about 15–18 minutes. Until it becomes golden brown. And your Apple Pie cookies are ready to serve!!

Can I used store-bought pie crust :

Yes, of course you can use store-bought pie crust. If you don’t have enough time to make it from scratch, then you’ve got to use a store-bought one; this is the most convenient method, and it’ll save your time as well. Just roll out the pie crust, fill it with apple pie filling, cut into shapes, and bake it as usual. This is the next shortcut to make apple pie cookies without sacrificing the taste. But I’ll suggest you make it from scratch. 

How to store apple pie cookies :

1) Store the cookies in an airtight container; make sure to seal the container well; it will stay fresh up to 2–3 days.  

2) If you want to store for a longer period of time, then freeze your cookies and store them in a freezer-safe container or bag. You can store up to 3 months. Make sure to label the date on the bag or container.

Recipe Variations :

1) caramel apple pie cookies :

Drizzle the caramel sauce over the apple filling before sealing the cookies. And make sure to sprinkle the sea salt over the top of cookies for a sweet and salty flavor.  

2) Apple pie oatmeal Cookies :

This is the healthiest option of anything. No more worries to make these cookies; simply you’ll need to mix in rolled oats to the dough and make sure to reduce the sugar and use coconut sugar and honey. It’ll make your cookies more delicious and healthy.  

3) Glazed Apple pie cookies :

You’ve got to add a pinch of nutmeg in the cookie dough for spicy flavor. And drizzle a sweet glaze made from powdered sugar, milk, and cinnamon over the chilled cookies. 

4) Apple pie cream cheese cookies :

To make apple pie cream cheese cookies you’ll need to add a layer of sweetened cream cheese before topping with apple filling. It gives tangy and creamy contrast to the cookies. Philadelphia cream cheese is best for these cookies. This is full-fat and block-style cream cheese, which will work well.

Spiced tea and apple cider perfectly combine with the fall flavor of the cookies. The spicy and strong flavor of tea goes well with apple pie cookies.

  • 1 Cookie Cutter

Ingredients
  

For Cookie Dough

  • 2 And 1/2 Cups All-Purpose Flour
  • 1 Cup Unsalted Butter ( Cold And Cubed )
  • 1/4 Cup Granulated Sugar
  • 1/4 Tsp Salt
  • 1/4 Cup Ice-Cold Water

For The Filling

  • 3-4 Medium Apples
  • 1/2 Cup Brown Sugar
  • 1 Tsp Ground Cinnamon
  • 1/4 Tsp Nutmeg
  • 1 Tbsp Lemon Juice
  • 1 Tbsp All-Purpose Flour ( Used Cornstarch As Well )

For The Assembly

  • 1 Egg ( Beaten For Egg Wash )
  • 2 Tbsp Sugar ( For Sprinkling )

Instructions
 

  • Take a food processor , add all purpose flour, sugar and spices pulse it well for proper mixing. Then add the unsalted butter and slowly pour the ice cold Water. Pulse to form a dough. Takeout the dough mixture on plastic wrap and refrigerate for atleast 30 minutes.
  • Heat the saucepan over the medium heat, add chopped apples, cinnamon, nutmeg and lemon juice cook them well until your Apple becomes soften. Then add the all purpose flour to make a pie filling thicken. 
  • Takeout your dough from refrigerator and rolled out on lightly floured surface you've to used cookie cutter as well. Then spoon the apple filling to the centre of circle.  Cover your filling with strips. Press the edges with fork to seal it. Refrigerate for 10-15 minutes to hold their shape.
  • Give egg wash over the top of cookies and bake them in Preheated oven for atleast 15 -18 minutes until it looks Golden brown. Remove from the oven and let them cool for few minutes then Serve and  Enjoy your Apple pie cookies.

Notes

1) After shaping the cookies, make sure to chill them in the fridge for 15-20 minutes. This helps them hold their shape while baking.
2) Sprinkle a bit of sugar on top before baking for extra sweetness and crunch.
3) Keep the butter cold when making the dough to ensure the cookies are flaky, like pie crust.
4) Use a small amount of apple filling to avoid it spilling out of the cookies while baking.
